Many of our areas in
the intermountain region are at elevations exceeding 5,000 feet. There
are many folks in communities like Evanston, Wyoming that enjoy growing
gardens. It's just a bit more challenging. In those areas, we need to
think of ways to extend the gardening season. Using hot caps, walls of
water, and hot beds are just a few methods we can use.
Vegetables that
thrive in cool weather are particularly recommended for high elevation
gardening. Like red beets, broccoli, cabbage, carrots, Chinese cabbage,
kale, fit this bill. Others are kohlrabi, lettuce, peas, potatoes,
radishes, spinach (one of my wife's favorites), Swiss chard, turnips,
and onions to name some of the major ones.
